Being a busy mom with a busy schedule I don’t feel bad when I cut corners in the kitchen. As much as I love cooking, I don’t always have the luxury of spending hours in the kitchen prepping and cooking grand meals. Having said that, I do like to know I am feeding my family the right foods and get pleasure in knowing they enjoy my cooking as much as I enjoy cooking it. Here are some of my favorite 20 minute meals that I’ve found around the web. I usually tweek a bit here and there (for example I usually add chicken or some kind of seafood to the Pasta with Peppers and Mozzarela or substitute a green, brown rice in place of white rice, almond flour instead of white flour, etc). But overall these 20 minute meals make life so much easier, so much so, that I usually revert to one or more of these weekly.
