Healthy Banana-Berry Oatmeal Muffins

As you know, Im always looking for healthy alternatives to any kind of treat, and with NYFW (New York Fashion Week) around the corner I figured I’d better get to it! I’ve been hitting the gym and making healthier food choices than I had previously made this summer (Oh Lord help me, I was terrible this summer). Plus, I feel much better about feeding my fam these healthy tasty treats as an alternative. Ahhh yes a family that eats well together…well you get the gist.


1 c Blueberries
1 c Rasberries
2 Bananas mashed
2 tbs Coconut Oil
1 Egg white
1/2 c Skim Milk
3/4 tsp Vanilla Extract
1 1/4 c Brown Rice Flour
1 tbs Baking Powder
1/2 tsp Baking Soda
1 tsp Salt
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1 c Brown Sugar (light preferably)


1. Preheat oven to 375 degrees
2. In a small to medium sized bowl mix the bananas, coconut oil, egg white, and vanilla extract
3. In a large bowl mix all your dry ingredients: flour, baking powder, baking soda, salt, cinnamon,        nutmeg and brown sugar. Once well blended add your banana mixture to your flour mixture and mix until well blended.
4. Wash your berries well and pour 1 tbs of flour over them. Gently mix in your berries to the mix with a wooden spoon. Now your ready to pour and bake!
4. You can either grease or line your muffin tin, then pour your mixture into each about 3/4 of the way to avoid spillage (trust me on this one…I learned the hard way, oops).
5. Bake for 18-20 mins, let cool 10 mins, and voila!
