Low Cal {Guilt Free} Funfetti Cupcakes

Im sure you all have seen these recipes all over Pinterest. Having both a newly acquired sweet tooth and NY Swim Week coming up (meaning I’ll be in a swimsuit for this entire week!) just didn’t seem like the best of combos for me. Enter this cupcake & soda recipe! I had to try something and fast, I could no longer ignore the fact that my mouth watered with every passing birthday cake. Plus my hubby is nursing a knee injury and little Baby A never says no to “coo cake”or “prickles” or any kind of sweet for that matter but that’s besides the point. I needed a solution and these low calorie Funfetti Cupcakes were just the thing I (ahem) I mean “we” needed!

Ingredients

1 box of Funfetti Cake mix
12 oz Fresca citrus soda (any diet citrus soda will do, I just happened to have some Fresca on hand)
Fat free whip cream (optional)
Sprinkles for decorating (totally optional but the little ones will love decorating their own cupcakes ;))

Directions

This recipe is super simple. Simply take 1 box of funfetti cake mix and pour 12 oz of any citrus (zero calorie) diet soda. Blend well until all lumps are gone. Pour batter into your cupcake tin about 1/2 to 2/3 of the way each. I like making mini cupcakes in addition to the regular sized cupcakes. I even had enough to make an individual sized cake. Bake according to the instructions on the box. I baked the cupcakes for 18 mins at 350 degrees. Let cool for 10 mins and enjoy! I had mine plain, my hubby iced his with Nutella, and the little one enjoyed topping his cupcakes with whip cream and sprinkles!
