I really crave a nice warm breakfast in the morning. Somehow a cold bowl of cereal and fruits just doesn’t cut it for me. But of course between getting the little one ready for school in the morning (yes he’s already started school…more on this later, ahem *clears throat*), getting myself together, getting my morning emails out and figuring out how I will fit it all into a 24/hr day a nice hot breakfast just is not in the cards for me most mornings. Until now…
I’ve figured out a quick and easy and might I add delicious pancake recipe that is not only low carb but healthy all at the same time. No joke its yummy, so yummy that I don’t even add syrup to it. And it is not nearly as dense as most of the protein pancake recipes I’ve tried. These pancakes come out nice and fluffy just how I like them :)
This recipe yields about 3-5 medium sized pancakes per batch. For us busy moms I’d suggest making a few batches so that you have some left over to freeze and serve up on a morning where making breakfast just doesn’t seem too enticing or worst yet plausible.
1 cup of almond meal (flour)
1/4 cup of sparkling water (this replaces the baking soda ordinarily used in pancake mixes)
2 tbsp of coconut oil (you can also use vegetable oil but I like the hint of coconut, blends well with the other ingredients)
1/4 tsp almond extract
1/4 tsp vanilla extract (optional)
1/4 tsp salt
2 tsp sugar substitute (I used Splenda and have used Stevia as well)
1. Whisk all the ingredients together.
2. Heat a non stick griddle to medium heat. I didn’t need to grease the griddle maybe due to the coconut oil.
3. Pour the pancake batter onto the griddle to desired size. Wait for the top layer to bubble, then flip the pancake over and allow to cook for 2 more minutes to ensure evenness.
4. Serve warm
I absolutely love this recipe because its quick and easy and I know I’m feeding myself and my family a healthy meal to get the day off right! And the possibilities are endless. Think toppings: strawberries, bananas, blueberries, coconut shavings, Nutella…umm delicioso!
