Paleo {Gluten Free} Snickerdoodles

Man, have I missed being on here and sharing pieces of me, my family, my work, and my life with all of you. I finally got my hard drive fixed. Unfortunately, still on pins and needles regarding the outcome of the data recovery (crossing fingers…and toes). It does feel good to be back on track though. All I can do is wait, and hope, and pray. In the meantime, as promised, here is the Paleo Snickerdoodle Cookie recipe I wrote about last week that I adapted from this Paleo recipe. Its insanely delicious and made of good gluten- free ingredients. Mmm, mmm, mmm…


For the cookie dough:
2 cups almond flour (or meal)
1/8 tsp baking soda
1/8 tsp salt
1 1/4 tsp cinnamon
1/4 cup coconut oil (softened)
2 tbsp honey
1/4 cup raw unsweetened coconut flakes
For the topping:
1/3 cup coconut sugar
1/2 tsp cinnamon
1. Preheat oven to 350 degrees
2. In a blender combine flour, soda, salt, and cinnamon. Pulse in the coconut oil and honey
3. Roll dough into 1 1/2 inch balls and flatten (I used a cup)
4. Bake 6-8 minutes and allow to cool
